Grape & Wine Chemistry

Introduction:An overview of the chemistry of grapes and wine with a focus on the impact of viticultural and enological factors. Topics include acids, sugars, phenolics, fermentation end-products, additives, winemaking units and calculations, and soil chemistry.
Dates & Times:This is a hybrid course. The majority of instruction will be completed online and two weekends will be designated for classroom instruction.
- Online portion of the class will be from 8/21/17 - 12/8/17
- Face to face class will meet Saturday & Sunday, 9:00am - 6:00pm, November 11 & 12; AND
- Face to face class will meet Saturday & Sunday, 9:00am - 6:00pm, December 2 & 3
